Vineyards: Scattered among old tinto fino vines, over 9 different plots, mainly in the area of Anguix and Roa.
Altitude: 820 m a.s.l.
Climate: Continental Mediterranean, with distinctly low rainfall levels.
Harvesting: Manually, into 15kg boxes. Approximate yield of 1.3 kg per vine.
Production: Direct pressing using a pneumatic press, with 6 hours of cold maceration, obtaining only free-run juice after 24 hours of static racking to ferment in new French oak barrels that are extra fine grain and very lightly toasted. Fermented at low temperatures with indigenous yeasts and no MLF, intense batonnage in the first month, very low sulphur levels, only prior to bottling.
Aging: 12 months in new French oak barrels.
Alcohol content: 13 % vol.
Serving temperature: 12°C.
