Harvesting period: Cabernet last week of September. Tempranillo and Syrah first and second week of October.

Harvesting: Manually, into 15kg boxes from carefully selected plots.

Maceration: Cold pre-fermentation at 5ºC for 24 hours.

Production and aging: 12 months in French oak barrels from the Allier forest.

Appearance: Deep ruby colour.

Nose: Notable complexity, aromas of wild blackberries, warm spices as well as dark chocolate and soft tannins.

On the palate: Quintessentially delicate, silky, sweet and bright, clean fruit, with mineral, salty notes that add length to the aftertaste and allow it to linger. A very complex and intense wine.

Food pairings: Soups and stews, lean red meat, perfect for hearty meals with lots of flavour.
